The Tome of Adventure Design (revised)  from Mythmere Games has been mentioned by a few of the creators I've interviewed. It has a multitude of tables focused at developing an adventure, split into sections (or "books") around Principles and Starting Points, Monsters, Dungeon Design and Non-Dungeon Adventure Design.

GM Gems from Goodman Games is System Neutral and contains 80 pages of d100 random tables split into three broad sections. These are The Urban Experience, Getting There is Half the Fun and The Dungeon.

Ultimate Toolbox from AEG is one that I have a soft spot for as it got me using more random tables in my games and has inspired several generators. It is a grand sprawling collection of d20 tables across 7 chapters.  These are Character; World; Civilization; Maritime; Dungeon; Magic and Plot plus an appendix of name and other tables.

GM's Miscellany: the Thingonomicon is from Raging Swan Press has pdf and book versions. It contains many lists grouped around 26 themes such as "Bustling Marketplace", "Looting the Body", "Smugglers' Lair" and "Wilderness Camping"

The Gamemaster Codex is for use with D&D 5e with sections containing rules summaries and advice on areas on the games. Although smaller than other tomes, each page is packed with tables, from hit locations to chases, to treasure, locations and combat encounters.

Fantasy Tome of Lists (2nd Edition) from JEN Games has options for pdf, softcover and hardcover. It is very reasonably priced and lists all of the tables in the Table of Contents in the Previews. Many tables are the familiar d20, d100 and d12 but others are unusual such as d44, d50 and d88.

The Science Fiction Codex of Lists  and Science Fiction Codex of Lists 2 have an assortment of varying length lists similar to their fantasy counterparts.

Tomes of Alphabets

This is actually three tomes from Goodman Games.

They have Advice from A to Z with random tables, hints and advice. There are some on Dungeons , Monsters and... Cthulu .

The Books of Random Tables from dicegeeks are collections of unrelated d100 tables covering a number of genres.

The Book of Random Tables is the first and Fantasy, with notable tables being Items in an Alchemist's Lab, Items on a Dead Goblin, Medicinal Herbs and Seafaring Encounters. It has companions Book of Random Tables Two, Book of Random Tables Three and Book of Random Tables Four

Some gamers love unusual dice and these service the d50 (or d100 halved) and the d30.
